We tried this tonight - Yummy!
Ingredients
1/2 tsp vegetable oil
1 onion, chopped
1/2 cup green peppers, chopped
1/2 cup ham, sliced
1 can beans (regular pork and beans or maple)
3 eggs
Instructions
1. Warm up the oil in a skillet over medium high heat.
2. Mix in the green pepper, ham and onion until it is cooked.
3. Stir in the beans. Let them heat for a few minutes until they are bubbling. Make sure to stir often.
4. Turn the heat to low.
5. Make 3 hollows in the bean mixture, and crack an egg into each hollow.
6. Let cook until eggs are preferred consistancy.
7. Sprinkle seasoning salt over eggs.
Each serving is 5 weight watchers points, and is a great source of fibre. Feeds 3 people.
